Tomato Basil Soup with Mini Ravioli

A tasty and comforting tomato basil soup that tastes great with mini cheese ravioli. It's perfect for a cozy meal.

Ingredients:

  • 1 can 28 oz crushed tomatoes

  • 3 cups vegetable broth

  • 1/2 cup chopped fresh basil leaves

  • 1/4 cup heavy cream

  • 1 cup mini cheese ravioli

  • 2 cloves garlic, minced

  • 1 small onion, chopped

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Grated Parmesan cheese for garnish

Instructions:

Put olive oil in a big pot and heat it over medium-low heat


When you add the chopped onion and minced garlic, saut until the onion softens


Set the pot on low heat and add the vegetable broth and crushed tomatoes


Add the heavy cream and chopped basil leaves, and then let it cook for 10 minutes


Add the mini cheese ravioli to the soup and cook them as directed on the package


Add pepper and salt to taste


If you want, you can serve it hot with grated Parmesan cheese and extra basil leaves on top
